I grew up in the UK and in the winter my mum would make big pots full of soup so we had a warm and delicious meal when we got home. It was something I loved then and still do now, even though I live in a rather warm spot, and cold winter days are few and far between -I still crave a nice bowl of soup when the hint of fall arrives. However, though I am able to replicate some of those soups -lentil and peas examples, the rest were traditional meat based soups like Oxtail and Cawl (a Welsh soup made with brisket) and as a vegetarian I need more ideas which was why I decided to buy this book.This book has 100 recipes which is a good start, and every single one of them, a healthy plant based soup. The book begins with a brief look overall at the topic of soup, some principles of creating a super food soup and basics – good fats, seasonings, aromatics, beans, soup composition, and some super food essentials . On the latter it is worth knowing that this is a book that will require you pick up some items at a specialist shop -think medicinal mushrooms, super berries, sea vegetables , seeds , grains -I am sure you can substitute (and there is a cheat sheet at the back) but note recipes feature maca, spirulina powder, dulse, wheatgrass powder. This was the one thing I did not love, for though I have many of these, if you do not, you will spend a pretty penny acquiring them and having been there with other books, it’s a pain!Then there are useful tips such as cheat sheets on cooking with super foods, cost breakdown, pantry ideas, health benefits, before delving into soups lead by broths – including those for energy, detox, beauty and healing which in a concept I love about this book.Then we go to chilled soups, which loving in a hot area I loved, and this goes so much more beyond just a traditional gazpacho - I loved the carrot, ginger and cannot wait to try the coconut turmeric. Then we have creamy soups, such as a corn soup or greens soup and a new take on a potato leek soup. Many of these I should note are accompanied by stunning pictures such as the truffled asparagus soup. This is followed by ‘brothy and noodle soups’ with a take on tortilla soup using chia seeds or a miso noodle soup, there is ramen, Pad Thai and some very creative , way out ideas such as green tea soup!We then go to chowders and porridges,, the kitchari is my absolute favorite as I love this dish and this recipe is simpler than most; then stews and chili, followed by accouterments - garnishes, horseradish cream , pesto or even coconut bacon bits. Followed by a useful guide on sourcing some of these ingredients!This is a great, creative cookbook, full of super food soups that will keep me warm, happy and healthy all winter!
Delicious recipes - our favourite is the Mushroom soup - on the down side though - one must spent a lot of money on all these superfood items - great as they are - mushroom soup for example requires 3 different kinds of dried mushrooms (at the back of the book it will tell you which brands are best) - each powder bag costs $20 (you won't use full bags but its the starting cost to stock up pantry) plus such things as kelp or dulce were also items i had to order via internet - really making this soup for the 1st time set me back $80+ Just in start up cost!! I have made it about 6 times now (4 portions each time) & had to re-order the dried mushroom powder again - this is for just 1 soup out of this book! Some of the other soups had a few even fancier items - also necessary to order ingredients via internet which i have not done yet - all in all - great recipes if you don't mind the cost
Julie Morris is an excellent researcher, chef, writer & photographer. This multitalented young lady has taken the superfood kitchen world by storm! If you havent any of her books yet, I highly recommend her "Superfood Kitchen" as a great foundation and training resource. The first chapter is worth the price of the whole book! It walks you thru some superfood education, quality, quantity, and what to expect from flavors, storage, shelf life etc. THEN the recipes follow. Soups, Smoothies, snacks, entrees, sides. salads - every one is better than the last :)We slowly started evolving into a superfood kitchen by starting with organic - nonGMO produce, and slowly adding superfoods to our pantry. Like Lucuma, Maca, Goldenberries (new addiction) raw cacao, pomegranate power and dates.Goldenberry pancakes are our go-to breakfast. Cashew Butter is decadent and addicting, yet healthy! We look forward to working our way thru all these soup recipes this winter... HIGHLY recommend. You won't be disappointed.
Definitely the best book in the series. I have all of the others and I almost didn't get this one because the other books aren't very practical. This despite the fact that I have about 90% of the ingredients... even some of the more difficult to find ones and I still have a hard time with having everything I need to make something so simple as a smoothie or snack. However, I didn't feel that way with this book. I was able to dive right in and make several of the recipes the same week that I received it.The recipes are very filling and surprisingly tasty. Definitely a must have if you are a vegetarian for sure.
got two copies of this, one for a gift........... i only found a handful of recipes that i wanted to try. most recipes require too many ingredients for my liking.......... but i'm not a great cook. I was hoping for a cookbook on soups to motivate me to make more soup. the first fifty pages are instructional, not recipes. if you like to cook and don't mind a lot of ingredients, you will probably like this book. the soups seem to be pretty healthy.......... it's probably me, not the book. feel free to recommend other soup books in the comments.
My goal is to make every recipe in this book. I often have cookbooks where I do more reading the actual making of the recipes; but this book was different. Right away I made several of the recipes, and cant wait to try more. Love the superfood ingredients and her use of miso... very creative!!! I have tried at least half of the recipes in this book. They have all been delicious. I use an Instant Pot and have found it easy to adjust the recipes to get the desired results. And every recipe I have tried leaves me feeling good after eating it. The soup pictured on the cover is my husband's favorite. Many superfood ingredients. Many fun ideas for garnishing/serving the soup.

About the Author
Beth Hensperger, a New Jersey native who has lived in California since her teens, has been educating, writing, and demo-lecturing about the art of baking for over 30 years. In the last few years, she has shifted focus to countertop appliance-driven cookbooks that embrace adapting traditional and professional recipes for the home cook: the bread machine, the rice cooker, the microwave, and a four-volume compilation specifically for use with the electric slow cooker, stressing personal creativity in preparation and selection of ingredients. This is for a microwave oven with 1100 watts. The details in the front of the book are great. Be careful if you get a microwave cookbook with a 1986 copyright as the ovens then were not 1100 watts and that makes a big difference as does a cookbook from 1992. The recipes here are new and reflect our changing tastes such as "South Indian Eggplant Slices." Then she throws in corn on the cob and mashed potatoes.There can be no question that with my sweet touch I liked the section on "Sweet Treats" the best. Enjoy!
This book is really good for learning the principles of cooking by microwave. The first chapter describes how the microwave works, and understanding how it works is key to using it correctly. I guess I won't go into the physics here, but it's really very interesting and explains so well the phenomena I observed but didn't understand. I now know exactly which objectives the microwave will achieve efficiently and effectively, and how to achieve those objectives.My favourite part of the book, besides the 'how it woks' chapter, are the boxed explanations which allow you to generalize beyond rote recipes. For example, how to cook vegetables in the microwave with type specific notes (leafy greens vs winter squashes).I have not actually tried a single recipe, because my goal in buying the book was not to prepare entire dishes or meals. Rather, I wanted to understand how the microwave could make my life easier. I felt that the microwave could decrease prep time, decrease cleaning time and save energy, with, in some cases, superior results. This book confirmed that suspicion and showed me how it could be done.That being said, I found a number of recipes that looked intriguing. Originally I didn't intend to make entire dishes, but now I plan to.The production quality is excellent, despite the complete lack of photographs. The book is very cleanly typeset, with subtle but effective use of colour.
Good tips on some uses of the microwave that are valuable time savers that we were unaware of. Some of the recipes worked for us but many did not. But overall the book was a good buy.

Awesome cookbook. I was living in a small bachelor apartment without a full kitchen, and this book kept me well fed. Even now that I have a full kitchen, I still use some of the recipes in this book because they are so good.
I moved into an apartment with a 1 KW microwave and no experience in using one. This book helped me to get the utensils I needed, and not to do anything dangerous. I'm still learning about recipes.
Would rec commend to anyone who wants a microwave cookbook. Lots of interesting recipes in it.
